Mulberry leaf extract was obtained from mulberry leaf powder processed from the first to third new leaves of mulberry branches during the late spring silkworm rearing period or before the first frost. The powder was air-dried, pulverized, and extracted with n-butanol, 90% organic solvent, and water under heating, followed by spray drying.
The mulberry leaf extract inhibited α-glucosidase activity, with the inhibition rate increasing with concentration. It also showed good inhibitory effects on the growth of Gram-positive and Gram-negative bacteria, with MIC values of 0.86% and 1.56% against Staphylococcus aureus and Escherichia coli, respectively.
