Vitamin B12 is a polycyclic aromatic hydrocarbon containing trivalent cobalt, and is the only vitamin containing a metallic element. It is a red crystalline powder, odorless and tasteless, soluble in water, sparingly soluble in ethanol, chloroform. It is most stable under weakly acidic conditions (pH 4.5–5.0), decomposes in strong acids (pH < 2) or alkaline solutions, and is partially destroyed by heat. Higher plants and animals cannot produce vitamin B12; all vitamin B12 in nature is synthesized by microorganisms. Vitamin B12 is unique in that it requires a secretion from gastric parietal cells (endogenous factor) for absorption. It participates in the production of red blood cells in bone marrow, preventing pernicious anemia and protecting brain nerves from damage.
