N-acetylglucosamine is the basic building block of chitin in the exoskeleton of crustaceans. It is a white powder at room temperature and is primarily produced by fermenting glucose and corn steep liquor powder with Corynebacterium glutamicum RDG-2110. It exhibits anti-inflammatory, anti-tumor, and antioxidant properties and is clinically used to treat osteoarthritis and rheumatoid arthritis.
