Canthaxanthin, also known as flavonoid, is a ketocarotenoid with the chemical formula C40H52O2, naturally found in mushrooms, crustaceans, fish, and algae. Its industrial products are deep purple crystals or orange-red powder, slightly soluble in vegetable oils, and must be stored away from light to maintain stability.
