What is Vitamin C?

   Vitamin C is a water-soluble vitamin, also known as L-ascorbic acid, with the molecular formula C6H8O6 and a molecular weight of 176.12.


   Vitamin C is usually in tablet form, sometimes in needle-like monoclinic crystals. It is odorless, has a sour taste, is readily soluble in water, and possesses strong reducing properties. It participates in complex metabolic processes in the body, promotes growth and enhances immunity, and can be used as a nutritional supplement, antioxidant, and wheat flour improver.


Application

Fruit and Vegetable Preservation: Rapid senescence of fruits after harvest is closely related to the large amount of reactive oxygen species (ROS) produced by post-harvest metabolism. If these ROS cannot be promptly eliminated by the antioxidant system, oxidative stress will result. Vitamin C is an important antioxidant in plants. Studies have shown that increasing the vitamin C content of fruits and vegetables during post-harvest storage can improve their preservation effect.


Inhibition of Lipid Oxidation: Vitamin C can inhibit lipid oxidation and enhance the antioxidant properties of emulsions.


Protecting the Stability of Tea Polyphenols and Improving the Quality of Black Tea: Vitamin C helps increase the content of theaflavins and thearubigins, reducing polymerization reactions. The content of theaflavins and thearubigins directly affects the quality of black tea, and polymerization products have an adverse effect on its quality.
