Betalain is a natural, water-soluble pigment found in plants such as red beets; it imparts colors ranging from reddish-purple to deep purple to foods.
It is primarily found in plants such as red beets, amaranth leaves, purslane petals, dragon fruit (both peel and flesh), and cactus fruit. It is readily soluble in water, producing a reddish-purple solution. While most stable in a mildly acidic environment (pH 4.0–5.0), it has poor heat stability; exposure to high temperatures, light, or alkaline conditions causes it to fade or turn yellow.
Application
