Propylene glycol alginate, also known as propylene glycol alginate, is an alginate compound composed of partially esterified carboxyl groups with propylene glycol and partially neutralized carboxyl groups with alkali.

Its hydrophobic propylene glycol groups can adsorb onto the surface of oil droplets, while its hydrophilic polysaccharide chains extend into the aqueous phase, forming a stable oil-in-water emulsion.
