Gellan Gum Powder

What is Gellan Gum Powder?    

Gellan gum, also known as gellan gum or kellen gum, is a linear polysaccharide composed primarily of glucose, glucuronic acid, and rhamnose in a 2:1:1 ratio, with these four monosaccharides forming repeating structural units. In its natural high-acetyl structure, acetyl and glycerol groups are present, both located on the same glucose group. On average, there is one glycerol group per repeating structure and one acetyl group per two repeating structures. After saponification with KOH, it transforms into low-acetyl gellan gum. The glucuronic acid groups can be neutralized by potassium, sodium, calcium, and magnesium salts. It also contains a small amount of nitrogen produced during fermentation.

Feature

Forms a thermally reversible gel: Gellan gum dissolves upon heating and forms a strong, transparent gel upon cooling, with a gel strength up to 10 times that of agar. Gel properties can be precisely controlled by ion concentration (especially divalent ions such as calcium and magnesium), achieving different textures from soft to brittle.


Excellent suspension and stabilization capabilities: Effectively suspends solid particles or oil droplets at extremely low concentrations, preventing sedimentation and stratification. Its gel network structure stably encapsulates flavor substances, pigments, and active ingredients, delaying release and maintaining system homogeneity.
