Gellan gum, also known as gellan gum or kellen gum, is a linear polysaccharide composed primarily of glucose, glucuronic acid, and rhamnose in a 2:1:1 ratio, with these four monosaccharides forming repeating structural units. In its natural high-acetyl structure, acetyl and glycerol groups are present, both located on the same glucose group. On average, there is one glycerol group per repeating structure and one acetyl group per two repeating structures. After saponification with KOH, it transforms into low-acetyl gellan gum. The glucuronic acid groups can be neutralized by potassium, sodium, calcium, and magnesium salts. It also contains a small amount of nitrogen produced during fermentation.
