Stachyose is a tetraglycan oligosaccharide composed of galactobiose, glucose, and fructose. It is found in the rhizomes of plants in the genus *Stachys* and is one of the various functional oligosaccharides naturally occurring in nature. Stachyose is a sugar formed by linking two α-galactose groups to the glucose group of sucrose via a 1,6-glycosidic bond. Pure stachyose is a white powder with a slightly sweet taste, about 22% as sweet as sucrose, and has a refreshing, odorless flavor.
Stachyose has good thermal stability and does not decompose at 100°C. However, its thermal stability decreases under acidic conditions, making it suitable for foods requiring heat pressing. Its moisture retention and hygroscopicity are lower than sucrose but higher than high-fructose corn syrup, and its osmotic pressure is close to that of sucrose. Above 80°C, stachyose exhibits coloring properties and can be added to baked goods to give them an appealing caramelized yellow color.
