Sodium Malate 

What is Sodium Malate ?   

Sodium malate, chemically known as DL-disodium malate, has the molecular formula C4H4O5Na2·H2O. It is a white crystalline powder, odorless and salty, readily soluble in water, with a melting point exceeding 300℃, and requires cool, dry storage.


As a food additive, it functions as an acidity regulator, buffer, water-retaining agent, and preservative, and is widely used in beverages, meat products, dairy products, and baked goods. It can reduce salt usage and maintain water activity.

It improves the texture of food, such as enhancing the elasticity and tenderness of meat products and making pasta products softer.


Applications
