Sodium dehydroacetate, also known as sodium dehydroacetate, is a low-toxicity, broad-spectrum food preservative. It is a white or nearly white crystalline powder, readily soluble in water, and exhibits excellent light and heat resistance; its aqueous solution remains stable even after heating at 120°C for 2 hours. As a new generation preservative following sodium benzoate and potassium sorbate, it is particularly effective in inhibiting mold and yeast growth.

Broad-spectrum antibacterial and highly effective antifungal: Sodium dehydroacetate effectively penetrates microbial cells, inhibiting their respiration and thus preventing food spoilage. It has a strong inhibitory effect on yeasts and molds that cause food spoilage.
Heat- and acid-resistant, stable: This ingredient exhibits excellent stability and is not easily decomposed even at 120°C. This characteristic makes it suitable for food processing methods requiring high-temperature sterilization or baking. Furthermore, it maintains good preservative effects under acidic or slightly alkaline conditions.
Colorless, odorless, and highly compatible: As a food additive, it does not alter the original color, flavor, or texture of food and has no adverse effects on the sensory quality of the product. This allows it to extend shelf life without compromising the original quality of the food.
Food Preservation and Freshness: Under the old standard, sodium dehydroacetate was widely used in pastries, bread, mooncakes, pickles, fermented bean curd, fruit juice, and pre-processed meat products to extend shelf life. In meat products, it could be added directly to fillings or sprayed onto the product surface.
Limited Use Areas: Under the new national standard, this ingredient is still permitted for use in pickled vegetables, but the maximum usage has been reduced.
