What is Lipase Enzyme?    

Lipases (glycerol ester hydrolases) belong to the class of carboxyl ester hydrolases and can progressively hydrolyze triglycerides into glycerol and fatty acids. Lipases are found in fatty animal, plant, and microbial tissues (such as molds and bacteria). They include phosphatases, sterolases, and carboxylesterases. Fatty acids are widely used in food, pharmaceuticals, leather, and daily chemical products.

Feature

Lipases are a class of enzymes with diverse catalytic abilities. They can catalyze the hydrolysis, alcoholysis, esterification, transesterification, and reverse synthesis of triglycerides and other water-insoluble esters. In addition, they exhibit other enzymatic activities, such as phospholipase, lysophospholipase, cholesterol esterase, and acylpeptide hydrolase activities. The different activities of lipases depend on the characteristics of the reaction system; for example, they promote ester hydrolysis at the oil-water interface, while in organic phases they can catalyze synthesis and transesterification.


Microbial lipases have a wider effective pH and temperature range than animal and plant lipases, exhibit high stability and activity, and show substrate specificity.


Applications

Microbial lipases can be used to enhance the flavor of cheese products. Limited hydrolysis of milk fat can be used in the production of chocolate milk. Lipases can impart a distinctive milk flavor to foods.


Lipases can prevent off-flavors in baked goods by releasing monoglycerides and diglycerides. In gelatin production, the defatting of bones requires mild conditions; lipase-catalyzed hydrolysis can accelerate the defatting process.
