Ethyl maltol is a food additive with the molecular formula C7H8O3. It is a white crystalline powder with a fragrant aroma.
Ethyl maltol is a derivative of γ-pyranone, with a melting point of 85–95℃. It is readily soluble in hot water, ethanol, chloroform, and glycerol, and has a caramel and fruity aroma. The solubility of ethyl maltol is 1g in 65mL of water at 15℃ and 1g in 55mL of water at 25℃. Ethyl maltol is a broad-spectrum and highly effective flavor enhancer, as its flavor-enhancing power is 4–6 times greater than that of maltol. One part of ethyl maltol can replace 24 parts of coumarin. It can also be used as a sweetener, aroma synthesizer, flavor modifier, and fixative, possessing the same characteristics as maltol in terms of acid suppression, bitterness suppression, deodorization, and de-irritant properties. The difference is that maltol can be obtained naturally (from barley, soybeans, etc.), while ethyl maltol is synthesized artificially.
Ethyl maltol solutions should be stored in glass or plastic containers. Large quantities must be stored in airtight containers, protected from light, and in a cool, dry place.
